Super Bowl Nachos

Last night we made our favorite party nachos to snack on while we watched the Packers win!  When I was growing up we used to make them on New Year's Eve.  They're really easy--here's the recipe. 

Sorry, this picture isn't the greatest photography or the neatest food preparation.  I was rushed - I didn't want to miss any of those super bowl commercials!




You'll need:

Tortilla Chips
Refried Beans
Velveeta Cheese, sliced
Salsa
Sour Cream
Green Olives, cut in half

Try to pick the flattest chips.  Use a knife to spread refried beans onto each chip.  Then, layer each additional ingredient in the order listed above.  Microwave for 30 seconds (may take a few more seconds, depending on how thick you sliced the cheese).  Also, you can omit the green olives.

Rhubarb Butter Crunch

Last weekend our neighbors called to offer us some of their rhubarb, if we wanted it.  I gladly accepted and she told me to stop by anytime and get some.  With different activities, me being sick a couple days and everything else going on we just made it over there last night.  Ryan told me, "Go ahead and get some, but I'm not eatin' it."

I found a recipe online, tweeked it a little and came up with this yummy dish...Rhubarb Butter Crunch.

(Sorry, I tried a couple different things, but the picture still wanted to flip this way.)

The recipe called for the rhubarb to be diced.  I thought I'd use my handy dandy chopper thingy.  Not the answer.  That just mooshed it up and made a mess.  So, I diced it by hand.
 

By the way, Ryan just came in and saw me eating it and going on about how good it was....

This is serving #3 for him!  Guess it's not so bad after all--I swear he's worse than the kids sometimes! ;)

Here's the recipe:

Rhubarb Butter Crunch

4C. Rhubarb, diced
1 C. Sugar (heaping)
3 Tbsp. Flour
1 C. Brown Sugar
3/4 C. Rolled Oats
1 1/2 C. Flour
1 C. Butter

Combine rhubarb, sugar and 3 Tbsp. flour and place in greased 9x13 baking dish.  Combine brown sugar, oats and 1 1/2 C. flour, cut in butter, and sprinkle over rhubarb.  Bake at 375 for 35-40 minutes.

My Birthday Cake

Yesterday was my birthday and one of my favorite things is lemon cake.  Not just any lemon cake, THIS lemon cake.  See, I don't like lemon cake otherwise, but I love this recipe.  So, since it was my birthday, I decided to make myself a cake. 

You'll need:

1 pkg. Betty Crocker Lemon Cake Mix
1 sm. pkg. Jell-O Instant Lemon Pudding
Vegetable Oil
Eggs
Orange Juice
Powdered Sugar


Put the cake mix, pudding, 4 eggs (unbeaten), 3/4 C. oil and 3/4 C. water into your mixer.  Beat for 10 minutes or until smooth.


In the meantime, grease...

..and flour a cake pan.
  
(Try to just flour the cake pan and not the stovetop like I did!)



Once your mix is smooth pour it into your cake pan.

Bake at 350 degrees for about 40 minutes.


While it is baking mix together:
1/3 C. Orange Juice
2 C. Sifted Powdered Sugar
2 T. Oil


While the cake is still hot prick with a fork lots of times...


then pour your orange juice mixture over the top


It will sink down through the fork holes.

This cake is so moist and delicious.  Enjoy!
